Rainbow Smoothie
This recipe works equally well as a nutritious and tasty breakfast or a quick and refreshing mid-day snack. You can use fresh or frozen berries, peaches, and any dark green leafy vegetable you have in your refrigerator.

Ingredients
- 1/2 cup of ice cubes
- 1/2 cup of strawberries
- 1/4 cup of blueberries
- A handful of spinach
- 1/2 cup of peach slices
- 1 ripe banana
- 1/2 cup of 100% fruit juice
- 1/2 cup of low-fat plain yogurt
Sweet Summer Peach Salsa
A summer spin on traditional salsa, this recipe is good on top of grilled chicken or fish. Try dipping with bell pepper strips, celery stalks, or cucumber slices to keep this a healthy snack or appetizer.

- 1 1/2 pounds tomatoes, chopped
- 2 bell peppers, seeded and finely chopped

- 1 lime, juiced
- 1/4 teaspoon pepper
Zesty Pasta Salad
This pasta salad is refreshing and easy to make. Enjoy it for lunch or dinner, or take it to your next potluck picnic.

- 2 cups whole grain pasta, cooked and cooled
- 1 cup cheese, cubed
- 3 green onions, diced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1/2 medium cucumber, chopped
- 1/4 cup Italian dressing
- Optional: deli meat, roasted or canned chicken, canned tuna, or beans
