Strawberry Butter Bites

These easy-to-make roll-ups are nutritious and delicious! 

Servings: 2
Total Time: 5 minutes

Ingredients

  • 2 large flour tortillas
  • 4-6 tbsps. peanut butter
  • 10 strawberries (thinly sliced)

Directions

  1. Place the tortillas on a flat surface and spread each with 2-3 tbsps. peanut butter.
  2. Divide the strawberries between the wraps and tightly roll up pressing the edge of the tortilla with peanut butter to adhere.
  3. Place the wrap seam side down on a cutting board and cut into 1 inch wheels.

Whole Wheat Pizza Bagel

Enjoy the flavors of pizza with a healthy twist. Don’t have bagels on hand, consider trying this recipe with bread or an English muffin

Servings: 6
Total Time: 15 minutes

Ingredients

  • 1/2 cup tomato sauce
  • 1/4 Tsp garlic powder
  • 1/4 Tsp Italian herbs
  • 6 Mini whole wheat bagels split in half (can also use bread or English muffins)
  • 3/4 cup mozzarella cheese, shredded

Directions

  1. Preheat oven to 425 degrees.
  2. Stir the tomato sauce and herbs in a bowl to combine.
  3. Place the bagels on a cookie sheet and coat each one with sauce.
  4. Sprinkle with 2 teaspoons of mozzarella.
  5. Bake for 10 minutes.
  6. Cool and serve.

Strawberry Aliens

Make fruit fun with these nutritious (and delicious) strawberry aliens.

Servings: Makes 24 aliens
Total Time: 15 minutes

Ingredients

  • 1/2 cup whipped light cream cheese
  • 2 teaspoons strawberry preserves
  • About 24 large strawberries
  • 48 mini chocolate chips
  • Blueberries, raspberries, blackberries
  • pineapples, cut into small shapes
  • toothpicks

Directions

  1. In a small bowl, stir together the cream cheese and preserves. Spoon the mixture into a plastic sandwich bag and snip off one corner to create a mini piping bag.
  2. Slice off the top or bottom of each strawberry to create a flat surface so that the strawberry will stand on its own.
  3. Slice a small notch out of the strawberry near the top and fill the notch with the cream cheese mixture.
  4. Press 2 mini chocolate chips into the cream cheese to create eyes.
  5. Press 1 or 2 toothpicks into the top of the strawberries and skewer with the remaining berries and pineapples to create antenna.
